Roast Vegetables
- 1 large red onion
- 1 large onion
- 200g mushrooms
- 1 butternut squash, peeled & diced into small pieces
- 2 red, yellow & orange peppers, quartered & deseeded
- 1 dessertspoon olive oil
- 1 dessertspoon balsamic vinegar
- Pinch of sea salt and black pepper
- Peel onions cut into 8 pieces each.
- Clean mushrooms and half.
- Quarter & deseed peppers.
- Dice the butternut squash into small pieces (as this will take longer to cook it should be half the size of the other vegetables).
- In a large bowl toss the vegetables in the olive oil, balsamic vinegar, sea salt and black pepper. Cook it in a hot oven 180 C for 15-20 mins turning once during.
- Serve hot or cold.
