Roast Vegetables

  • 1 large red onion
  • 1 large onion
  • 200g mushrooms
  • 1 butternut squash, peeled & diced into small pieces
  • 2 red, yellow & orange peppers, quartered & deseeded
  • 1 dessertspoon olive oil
  • 1 dessertspoon balsamic vinegar
  • Pinch of sea salt and black pepper
  1. Peel onions cut into 8 pieces each.
  2. Clean mushrooms and half.
  3. Quarter & deseed peppers.
  4. Dice the butternut squash into small pieces (as this will take longer to cook it should be half the size of the other vegetables).
  5. In a large bowl toss the vegetables in the olive oil, balsamic vinegar, sea salt and black pepper. Cook it in a hot oven 180 C for 15-20 mins turning once during.
  6. Serve hot or cold.
